After the filling and base have been cooked to perfection its time for the hardest element, the caramel. I decided I wanted salted caramel so added some sea salt while adding the sugar syrup to the cream. I filled the tarts up to the edge then piled some walnuts on top, along with a final drizzle of caramel. These tarts are rich and definitely a treat, but well worth the effort.
