I stumbled across it years ago when a co worker brought an amazing cake to work. I got the recipe and have perfected it over the years. I think the special ingredient that makes it rich and moist but still light is the greek yoghurt/sour cream. Also you mix it up all in one pot, so there are less dishes to do when you are finished baking- bonus!
6 Tbsp Cocca
2 C Sugar
1 C Water
1 Tbsp Instant Coffee
2 C Plain Flour
1 Tsp Baking Soda
1/2 C Greek Yoghurt/Sour Cream
Preheat oven to 180 degrees and grease tin. In a large pot melt butter, water and coco over medium heat until all ingredients are mixed. Remove pot from heat and mix in sugar. Once sugar is dissolved mix in sifted baking soda and flour. Mix in eggs. Once all mixed add the yoghurt. Pour into cake tin and put into oven. It usually takes around 40 minutes to cook- depending on the oven.
I often just dust with icing sugar, but if you like can finish with chocolate ganache.
It's such a great recipe to have, I have had so many people ask for it including a friend of mine who managed a cafe and put it on the menu- what a compliment!
